~mini blueberry muffins~{paleo}

~For those of you looking for something a little healthier this 4th of July~

 mini blueberry muffins


Preheat oven to 400 degrees. In a mixer, blend: 3/4 cup egg beaters 3 T. honey 2 T.coconut oil, melted 2 T. coconut milk 1/4 t. salt 1/4 t. vanilla In a separate bowl mix the following: 1/4 t. baking powder 1/2 cup coconut flour Add the dry mix to the liquid mixture, and blend. Add 1/2 cup fresh blueberries. Bake 15-20 minutes or until a toothpick inserted in the center comes out clean. This is a small recipe. Mine made 8 mini muffins at 103 calories each.

Ok, I also wanted to give you a update on my sugar detox because I have made it a whole week!

I am going through Marta, she is amazing!

The good news is that I am down 8 pounds in 1 week!
I have gotten rid of that puffy bloated look and feeling.
My energy levels still aren't where they used to be but my clothes are fitting better and I actually wore a bikini yesterday. 
I have more headaches than usual, but this is all part of the detox.
My body got so used to all the crap I was putting in it, it's fighting me.

The food choices are not that hard. 
I've been eating a lot of bacon, turkey burgers, sunflower seeds, and my favorite, blueberries. 
And I am drinking a TON of water.

I am on day 3 of the sugar detox.
It hasn't been horrible.
On day 2 I was super tired and basically had zero energy.
I haven't had too many sugar cravings but the no dairy and wheat is a tad hard.

I am down 6 pounds in 3 days.
That's a bonus but I am hoping my allergies will go away and hoping my energy levels will go up.
I don't feel super hungry, I attribute that to all the protein I've been eating.

I hear once you hit day 5 energy levels go up, I hope so!

~sugar detox~{day 1}

Hello.
My name is Melaine, and I am a sugar addict.

A latte without vanilla? 
Unheard of.

Pancakes without pure maple syrup?
No thanks.

Sliced strawberries without sugar on top?
Why?


So I am curious. 
I am curious to see if my allergies will get better after no sugar, wheat, and dairy.
I am curious to see if I will have more energy.
I am curious to see if my "puffiness" will go away.

14 days.
I can do this, and hopeful I can keep it up longer.
