~tex-mex casserole~

An easy healthy hearty dinner,






Ingredients

  • 1 cup sliced green onions 

  • 2 lbs ground turkey
  • (10 3/4-oz.) can cream of mushroom soup 
  • 1 cup milk 
  • (4-oz.) can chopped green chiles
  • 1 cup (4 oz.) shredded pepper Jack cheese, divided
  • 1/4 cup chopped fresh cilantro or parsley
  • cooking spray 
  • (6-oz.) package buttermilk cornbread mix
  • 3 tablespoons chopped fresh cilantro
  1. 1. Preheat oven to 400°. Cook ground turkey in a large skillet over medium heat stirring often, 5 minutes or until meat crumbles and is no longer pink. Add green onions, and sauté 1 minute.
  2. 2. Stir in soup and next 2 ingredients. Bring to a low boil, and remove from heat. Stir in 3/4 cup cheese and 1/4 cup cilantro. Add salt and pepper to taste. Pour turkey mixture into a 2-qt. baking dish coated with cooking spray.
  3. 3. Stir together cornbread mix, 3/4 cup water,  3 Tbsp. cilantro, and remaining 1/4 cup cheese. Pour cornbread mixture over turkey mixture in baking dish. 
  4. {I used a cast iron pan}
  5. 4. Bake at 400° for 20 to 25 minutes or until golden.

~protein packed bacon omelet bites~

I recently found this recipe here and knew I had to try it.

These are so good and so filling because of all the protein!



I didn't use the avocado, simply because I didn't have any. I also used turkey
bacon rather than regular bacon. Trader Joes has great turkey bacon.
I seriously have been eating these for breakfast lunch and dinner, and one out of two kids ate these :)

I broke down the nutritional info for you too, making it with turkey bacon and no avocado.

3.7 grams fat
3 grams carbs
and
17.8 grams protein

~crockpot paleo cheeseburger soup~

If you are like me, and overdid it in the sweets dept. this holiday season,
you are probably in the market for some healthy food choices.

If you've been reading my blog awhile now, you know I love my crockpot.
{still using the same one we got on our wedding day 17 years ago!

Last night I made a delicious soup that is not only healthy, but very filling.



The recipe is from here~I made all these meals in late September and I am just now on the last one!

Crock Pot Cheeseburger Soup
Ingredients:
1 pound ground beef, browned {I used turkey}
½ cup chopped onion
½ cup chopped pepper
1 can diced tomatoes (14.5 ounce)
1 teaspoon salt
1 teaspoon oregano
½ teaspoon pepper
3 cups beef broth {I used low sodium}
4 cups diced potatoes (I skipped, and you will want to if you are serving paelo)
8 ounces cheddar cheese, shredded. {I left this out and just sprinkled shredded cheese on top, about a 1/2 cup total.}

Directions:
Combine the beef, or turkey, onion, pepper, spices, tomatoes, broth and potatoes in bag.

Write on bag: ¼ cup flour (almond flour=Paleo), {I used whole wheat}
1 cup milk (almond milk for Paleo, which I used)
1. Cover and cook on low for 8 hours.
2. About 30 minutes before it is time to eat, combine the flour and milk. Whisk until no
lumps remain. Stir into soup. Add cheese and stir again. Cover and cook until soup is
thickened…about 30 minutes.

~healthy stuffed squash recipe~

This is by far one of my favorite fall dinners.
It's super good and filled with protein and nutrients!



I like to serve this with a rustic bread and a pear and gorgonzola salad.
